Succotash is a culinary dish consisting primarily of sweet corn with lima beans or other shell beans. Other ingredients may be added including corned beef, potatoes, turnips, pork, tomatoes, multi-colored sweet peppers, okra and sometimes the addition of herbs like basil. Because of the relatively inexpensive and more readily available ingredients, the dish became popular during the Great Depression in the United States, and is still quite popular today especially in the summer with fresh corn and tomatoes.

Heat olive oil in a skillet over medium heat.
Stir in vegetables and spices.
Cook to desired tenderness.
