Lacy Wooden's Succotash

This Succotash recipe comes from Citizen’s own, Lacy Wooden. When asked about the dish, Lacy explains that “this dish was always on my grandmother’s table, with sweet skillet cornbread, of course.” Thank you, Lacy! 

Succotash is a culinary dish consisting primarily of sweet corn with lima beans or other shell beans. Other ingredients may be added including corned beef, potatoes, turnips, pork, tomatoes, multi-colored sweet peppers, okra and sometimes the addition of herbs like basil. Because of the relatively inexpensive and more readily available ingredients, the dish became popular during the Great Depression in the United States, and is still quite popular today especially in the summer with fresh corn and tomatoes. 

Ingredients: 

  • 1 package (12 ounces) frozen corn
  • 1 package (12 ounces) frozen lima beans
  • 1 package (12 ounces) frozen okra
  • 6 ounces frozen, chopped onions
  • 2 tablespoons olive oil
  • 2 cups fresh or 1 can (16oz) diced tomatoes
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • Salt and pepper, to taste

Directions:

  1. Heat olive oil in a skillet over medium heat. 

  2. Stir in vegetables and spices. 

  3. Cook to desired tenderness.
