Superfood Spotlight: Watermelon

Watermelon is the quintessential summer treat. They’re naturally sweet and oh-so refreshing during these hot months. Watermelon is also a nutrient powerhouse as it contains the highest amount of lycopene of any fruit or vegetable. Lycopene has been shown to reduce the risk of certain types of cancer, specifically prostate cancer. Watermelon at 92% water will also give you a good dose of hydration on these hot July days. Strawberry Watermelon Caprese Salad

Ingredients: 

  • 2 cups strawberries, hulled and sliced
  • 2 cups watermelon cubed
  • 8 ounces fresh low-moisture, part-skim mozzarella
  • 2 Tablespoons fresh basil leaves
  • 2 Tablespoons olive oil
  • salt & pepper to taste

Directions:

  1. Wash strawberries and pat them dry. Hull and slice strawberries and cut watermelon into bite-sized cubes.
  2. Cut mozzarella into bite-sized pieces.
  3. Mix strawberries, watermelon, mozzarella and basil leaves in a large bowl.
  4. Add olive oil, salt, and pepper to taste. Mix well.
  5. Serve cold and enjoy!

Nutrition Facts per ¾ cup of salad: 175 calories, 12g Fat, 9g Carbohydrate, 2g Fiber, 7g Protein
