Superfood Spotlight: Strawberries

It’s strawberry season and there are so many reasons to eat them. Strawberries are not only delicious, but are packed with nutritional benefits. One serving, or about 8 berries, provides 160% of the Recommended Daily Value for Vitamin C and contains high amounts of antioxidants which may help improve heart health, lower the risk of developing some cancers and lower blood pressure. 

How to Store Strawberries

  1. Try to keep your fresh strawberries as dry as possible.
  2. Refrigerate strawberries in their original package between 32° and 34°F.
  3. Rinse strawberries gently with cool water just before you’re ready to eat them.
  4. To enhance their natural flavors, let strawberries reach room temperature before serving.

Strawberry Shortcake Overnight Oats

1 serving

Ingredients

  • ½ cup rolled oats
  • ½ cup skim milk
  • ¼ cup plain, Greek yogurt
  • ¼ teaspoon vanilla extract
  • 1 Tablespoon maple syrup
  • ⅓ cup chopped strawberries
  • ⅓ cup blueberries
  • 1 tablespoon Chia seeds
  • Granola for garnish

Directions

  1. Place oats in a 12-ounce mason jar. 
  2. Add milk, yogurt, vanilla extract, maple syrup, strawberries, blueberries and chia seeds. 
  3. Mix well and ensure oats are completely covered. 
  4. Refrigerate for at least 4 hours.
