The weather is getting cooler and soup’s on the menu. This high-protein, fiber-rich Taco Soup recipe comes from Citizen’s own, Kim Hood. Kim loves this super simple recipe and often brings it to department pitch-ins. Did we mention it’s also delicious? Thank you, Kim! Ingredients: 

  • 1 lb ground turkey
  • 1 onion diced
  • 2 (15 oz) cans  of black beans
  • 1 (15 oz) can of corn
  • 1 (15 oz) can of diced tomatoes
  • 1 (10 oz) can of Rotel diced tomatoes with chili peppers
  • 1 package of reduced sodium taco seasoning
  • 1 package of Hidden Valley Ranch dressing mix
  • Optional toppings: shredded cheese, sour cream or greek yogurt, avocado, tortilla chips

Directions: 

  1. Cook ground turkey with diced onions until turkey is cooked through, about 8 minutes. 
  2. Add remaining ingredients – do not drain canned items. 
  3. Simmer for approximately 30 - 60 minutes. 
  4. Add optional toppings, if desired. 

Nutrition Facts per ⅙ recipe: 245 calories, 6g Fat, 30g Carbohydrate, 7g Fiber, 23g Protein
