Superfood Spotlight: Avocado

Avocados are a heart-healthy, nutrient-dense superfood. It's called a superfood because it provides substantial amounts of vitamins, minerals and other nutrients with relatively few calories. One-third of a medium avocado (50 g) has 80 calories and contributes nearly 20 vitamins and minerals, making it a great nutrient-dense food choice. Although phytonutrients are not essential, research suggests they may promote human health.

LIGHT AVOCADO GREEN GODDESS DRESSING

Ingredients

  • 1 ripe, Fresh California Avocado, seeded and peeled
  • 1/2 cup Greek yogurt, plain, nonfat
  • 2 anchovy fillets (optional)
  • 2 cloves garlic, minced
  • 1/4 cup tarragon leaves
  • 1/4 cup parsley, chopped
  • 2 Tablespoons water
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon lemon juice
  • 3/4 teaspoon agave nectar or honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon hot sauce

Directions

  1. Combine all the ingredients in a food processor
  2. Puree until smooth
  3. Add more water for a thinner consistency, if desired
